Important ingredients are the following:
- 3-4 pounds ripe elderberries (done de-stemming)
- 1 packet pectin MCP
- ¼ cup lemon juice (newly squeezed)
- 4 ½ cups granulated white sugar
- ¼ teaspoon margarine or butter
- Saucepan, pot and tongs
Rinse the clusters of elderberry properly. Use the ones that are entirely black or blue or just the ripe ones. For every batch, gather 3 lbs of it de-stemmed. After de-stemming, wash it again. In a big pot, crush it to release its juices. Heat and let it boil. Simmer 10 minutes. Mash the berries and transfer slowly including the juice and let strain for few hours. Organize the sterilized jars, and calculate the juice and put pectin per batch of juice. Bring to boil and add the remaining ingredients. Stir and properly boil again. After 2 minutes take out from heat then properly place it to the jars.
