Now you need to decide what you want to freeze your peaches in. Some people prefer sugar while others prefer syrup or natural juices.
If you choose to freeze in sugar…
- Add 1/4 teaspoon ascorbic acid (to prevent darkening) with 1/4 cup cold water per quart of peaches
- Pour the mixture over the peaches
- Next add 2/3 cup white sugar for each quart of peaches and mix gently
- Lastly spoon peaches into containers, leaving about 1/2 inch at the top
- Seal the containers and freeze
If you choose to freeze in syrup…
- Syrup can be made by combining one part sugar with two parts water.
- Heat both in a pot on low until sugar is dissolved
- Chill until cold to the touch before adding the peaches
- Next put about half of a cup of the syrup into the container
- Add the peaches and cover them with the remaining syrup. Leave about half inch at the top.
- Before you seal the container put a ball of wax paper on the top. This will keep any of the fruit from rising to the top above the syrup.
- Seal the container and freeze.
If you choose to freeze in fruit juice…
- Chose an appropriate juice: white grape, peach or apple juice seems to work the best
- Mix 1/4 teaspoon of ascorbic acid per quart of fruit juice or water.
- Spoon the peaches into the container and poor the juice over the fruit. Make sure to leave about half inch at the top.
- Seal the container and freeze.
